Sea Bass with Savoy Cabbage and Red oil dressing.
I went into my local fish monger this afternoon and bought some fresh sea bass. This sea bass with savoy cabbage and red oil dressing recipe was inspired by my holiday trip to Hungary. Had a lot of meat dishes as meat was relatively cheaper than fish. Most of the fish are imported in Hungary as it is a land lock country. However, there were a number of local fish dishes I tried like catfish and carp. Since Hungary has several mountains and hills, there are good numbers of rivers and lakes.
When I arrived home, I was on a mission to have fish detox!! Because, I simply like fish. I am going to share with you my Sea bass with Savoy cabbage recipe. All inspired by my journey to Hungary.
- 200-250g of whole Sea bass dressed and cleaned
- 1 fresh lemon but, cut into halves
- pinch of salt and pepper.
- pinch of dried garlic
- 1 tbsp of cold pressed rape seed oil.
Seasoned fish with salt and pepper. In a low heat pan, add 1 tbsp of rapeseed oil. When hot add the seasoned fish in the pan and cook for 3-5 minutes, turn the other side of the fish to cook. At this point add the cabbage around the edges of the fish in the pan to cook. Sprinkle some dried garlic on the vegetable. Cover to cook for 5 minutes.
- One cup of rice or two if you prefer. There will be enough left over for use later.
- 1/2 a cup of dry raisins
- 1 tbsp of coconut oil
- 1 tsp of turmeric powder. Can use fresh if preferred
- pinch of salt.
I am NOT going to explain how to cook rice. I usually rice cooker. Put everything in the rice cooker with enough water. Cover and Leave until cooked.
The red oil
- 100ml of cold pressed rape seed oil or extra virgin olive oil
- 2 tsp of smoked paprika
- 1 tsp dried chilli flakes
- 1 tsp of dried oregano
- 1 tsp of dried parsley
- 1 tsp of dried rosemary
Mix everything together in a clean empty jag. leave to infuse. keep stirring occasionally to help infuse evenly. Keep to use again in the future. This quantity is enough to use about 4-5 times. You can use the oil to marinade chicken or indeed pork.
Pour about 20ml into a small bowl, add juices from 1/2 a lemon, black pepper and salt to taste. This can be drizzled over the cabbage.
Bringing the dish together. Sea bass with Savoy cabbage and Red oil dressing.
Put the cabbage in the middle of the plate and drizzle the 20ml dressing made earlier on the cabbage. Dish the rice around the cabbage. Put the fish on top of the cabbage and add some more dressing over the fish. Enjy
Just so you know, savoy cabbage provides, fibre, Vitamins A, C, K and Vit B1 Also contains folate, potassium, manganese, Iron, selenium, calcium and Magnesium.
Raisins are equally good for you too. They contain anti oxidants, helps digestion, reduce acidity, help against anaemia, help fight infection and great for healthy bones. It will be useful if you include raisins in your daily diet.
