Salmon with Tropical salads
I whipped up this recipe because I happen to have the ingredients at home. I just happen to use what I had available at the time and it came out really nice. My husband who is not a huge fan of fish even enjoyed this dish. This is really easy, healthy and super quick to make. This dish showcases the ingredients and how wonderful they taste and well-balanced everything is . There isn’t a lot of cooking but this dish, salmon, and tropical salads is delicious. I know I made it and I thoroughly enjoyed it.
If you don’t like salmon, you could replace with any fish of your choice, cod or sea bass will also go very well with the tropical salads.
So let us get started with our dish of the day!!
- Salmon steak or salmon fillet. 300-400g
- 6 cherry tomatoes. Cut into quarters
- 1/4 of pineapple. Cut into small cubes
- 1 medium size avocado. Remove the stone and skin and cut into small cubes
- Fresh parsley. Finely chop about 1 tbsp
- Fresh chives. Finely chop about 1tbsp
- 2 spring onions. Thinly chopped
To get started with our dish, salmon, and fresh tropical salads, First of all, wash the salmon, put it on a tray or small casserole dish. Heat the oven to about 150-180 degrees. Put the salmon in the oven for about 20 -25 minutes. The depends obviously on the weight of the fish. Do not season and do not add any oil. Salmon is oily and will cook in its own natural oil.
In the meantime,
Put all your chopped fruits and vegetables in a bowl. Add the fresh herbs ie the parsley and the chives. Mix everything together. Do not add any salt or olive oil at this point.
Home made dressing:
- 20-30ml of olive oil
- Pinch of dried mixed herbs
- pinch of dried garlic
- 2 tbsp of balsamic vinegar
- Juice of 1 lemon
- Salt and black pepper to season.
When the salmon is cooked, remove from the oven, take the skin off and debone the salmon steak. If you use fillet, remove the skin and flake the rest of the fish. Add some salt and black pepper to season.
Toss some dressing through the flaked fish and assemble as you wish.
This is so fresh, nourishing and very simple to make.
