This Hot spicy chicken liver will convert anyone who is not a liver lover. There is enough kick and heaps of flavour to make it an enjoyable experience. We have this recipe at least once a week and it is always a delightful experience. This ofal when cooked well is delicious, is a good source of protein,  contains the  B Vitamins, iron,  vitamins A, folic acid  as well as Zinc.

Hot Spicy Chicken Liver with rocket salad. 

 

Ingredients:

  • 250g Chicken livers      spicy chicken livers
  • 1/2 small onion
  • 2 small tomatoes
  • 1/2 of green pepper
  • two cloves of garlic
  • 1 tsp mixed dried  herbs
  • 2 tbsp of olive oil or rapeseed oil
  • Pinch of chilli flakes
  • 3 leaves of sage
  • A handful of basil and parsley 
  • An inch of ginger

Instructions:

Place the chicken liver in previously made  basil and parsley marinade for a few minutes.

Meanwhile roughly chopped the tomatoes, onion, green pepper, garlic and ginger in a food processor

Heat the olive oil in a pan,   when hot, add the loose leaves of the  sage first for a few seconds, then add the mixtures  from the food processor.

Cook for about 2-5 minutes stirring at the same time. Reduce the heat and add the livers.

Add some chilli flakes and salt to taste. Keep cooking the liver under low heat for 5-7 minutes. Keep an eye on the livers as it is very easy to overcook it. 

I personally prefer my chicken livers to be  pink when  split open and  there is no trace of blood in them. 

Serve with bread and some wild rocket salad. This is  enough for 2 people. 

The salad: 

Wash about 100g of rocket, cut 1 large tomatoes into slices and 1 medium size shallots also cut into small slices. Put everything in a bowl. 

Now the dressing:  2 tbsp of balsamic vinegar, I tsp of honey, pinch of dried mixed herbs and pinch of  garlic granules/powder. 1/2 the juice of lemon. Add salt and black pepper. Mix all together in a cup. Drizzle on the  salad and serve with the liver. This dressing goes well with the salad as rockets tends to be a bit bitter. 

If overcooked it will be hard and grainy!!!!
